Everything I eat is a plant-based whole food. No meat, no dairy, no fish (sorry, my fellow Alaskans and yes, I did go fishing this summer as my husband is still an omnivore). I will admit that when I first started contemplating this move earlier in the year I was focused on what I would no longer be eating and it seemed like it would be a whole lot of work.
It’s not. It has been easier than I expected to stop eating animals and animal products. If you’re on Facebook, you may have noticed that I posted a “wow, isn’t my meal pretty?” picture a few weeks ago. I’ve discovered and re-discovered flavors, I’m trolling websites (ForksOverKnives.com is my current favorite) for recipes and meal planning. I’m planning my meals for the week before I go shopping (this has never been my strong suit). I’m experimenting, eating whatever I want (hooray for rice, sweet potatoes, pasta and whole grain bread, not to mention the tons of seasonal fruits and veggies) and I’m down 7 pounds since I started. Not only that, my energy is great, my sleep even better and digestion (which I thought was fine) is even better. My grocery bills are lower (it’s amazing how much you save when you stop buying animals and animal products).
Most of all, I’m having FUN in the kitchen. My husband and I have always done “he cooks the meat, I cook the veggies” in the kitchen. The difference now is I’m making so much more than steamed broccoli or kale chips. I’m making Kale Slaw with Jicama, Santa Fe Pasta, Morrocan Pasta, Sweet Potato and Black Rice. Every meal is beautiful, cleanup is a breeze and I eat until I’m full. What else could a girl want?
